Here's Eugene's late mother's simple recipe for Bulgogi (Korean steak):


1 lb. flank steak (I bought some nice marbly Prime at Fairway and it made a wonderful difference)
Bunch of scallions
5 cloves garlic
Soy sauce (2 tablespoons or so)
Sesame oil (1 tablespoon or so)
Sesame seeds (I used black ones)

Chop up the scallions and garlic.

Cut the steak crosswise against the grain into strips about a 1/2-inch thick

Mix everything in a dish, cover & marinate at room temperature for hours and hours (I did 5).

Cook on super hot coals, turn once, it should take only a few minutes a side.

Serve with rice (and stir-fried bok-choy as we did).

I'm having a good weekend at the grill: Babyback ribs are hickory-smoking on the water-smoker now, will be ready in 5 hours or so.

I was on my own tonight for grub so I whipped this up.



Lotta garlic, red onion, tomato, mushroom, hot cherry peppers, anchovies,
capers, black olives, fresh parsley, etc. I think when it kicks in I'm going to
be on my own for sleeping tonight too.

I only recently developed a taste for olives, after first hating them, then kinda indifferently tolerating them. Now I friggin love 'em like they're made out of meat or something.
