How Do You Like Your Meat?

We went to Wolfgang's Steakhouse in Tribeca Friday night , got the steak for two which is the house specialty.
It's cooked medium rare , it was absolutely delightful, the whole meal was great .

For years I would only eat steak well done and the more well done the better .....this is true for many Irish people.....meat was bland ......I might be the only person to ever claim that America made me sophisticated , in terms of how to eat steak anyway....

So I ask you this


How do you take your meat?

I was a very picky eater growing up, which has worn off slowly. I progressed to not liking beef, to liking it well, and now I order it medium. I've recently crossed the thresshold where I don't find it disgusting undercooked, but my preference is that the meat is actually warm all the way through.

also looks like you need toclean the lens on that camera

I like my meat bloddy - rare to medium rare. When in doubt - order it the way the chef suggests. At steakhouses - Luger's, Sparks, The Palm, etc. it is always suggested medium rare.

Looks like a great meal irish. Got me salivatin'.

This guy came from Lugers , and yes ,the waiter suggested medium rare "it's how the chef prepares it".....if I have any complaint about Wolfgang's it was that the table for two were very close together....., overall , it was great though.

they have that 28 day aged steak....

I'm a medium rare guy, with the understanding now that the quality of the makes the real difference.

At a steakhouse you get that USDA prime, that's better rare than that which you'd get in a supermarket, so if you're gonna go bloody that's the place to do it.

Love me some steak.

when i grill my own steak, i aim for medium, and all too often miss. but as much as i try to get the best cuts available, i know they're not the kind that are better rarer, so it's not too bad if i go medium-well.

at a good restaurant, i order medium, and am delighted when they show up medium-rare.

I don't eat red meat often these days. But when I do, I like it to be a good cut of meat and well-prepared. It has to be worth the calories and cholesterol.

I aim to have it mooing when I have it outside.

And it has to be a porterhouse, don't it?

The steak for two..or three or four features a mix........really great.....the people next to us had the bone in rib eye.....thing was huge....I was going to get the porterhouse until the waiter made his pitch for the steak for two....

I really enjoy them all. Digging on "lesser known" cuts like the skirt steak lately.

I'll make myself a ribeye. I'll order a porterhouse/t-bone.

Skirt steak's nice for marinades/funky rub experiments.

funny......I recently bought the indoor/outdoor George Forman Grill , this thing

anyway.....skirt Steak done on that thing over high heat for a few minutes is great....

Every time I buy skirt steak my wife bemoans how expensive it is per pound over here...like I ever look at that....it's a lot cheaper in Puerto Rico so her Mom sends it over to us by mail......which i am sure breaks all types of laws....

At steakhouses I'll usually ask the waiter which cut that is the specialty of the house - Luger's is the porterhouse, The Post House is the rib-eye I believe, Sparks is the sirloin, etc.

If it doesn't appeal to me (not a big filet fan) I'll go porterhouse.

irish - that pic looks like you did get the porterhouse, no?

I'm still fairly new to high-end steaks and what not. I usually go some sort of filet as I'm not quite up to the fatty pieces. I like the tender 'plain' filet.

Haven't been to any of these really awesome steakhouses either though. The last one I was at was RED (i think that's waht it was called) in the Mt. Airy Casino. it was pretty decent, though the service completely sucked. bonus points for not having to pay since it was my bachelor party.

That could be a 'Chateaubriand' - a dish which is usually served sliced and usually as a meal for two.
Essentially it's a chunk of tenderloin cooked for a bit whole and then sliced and cooked a bit more before being served with a sauce.
