Last night we went to a "Festivus" party, complete with grievance pole.
Mine was "People who bring re-usable bags for their groceries, then drive them home in a big-ass SUV".

Things got pretty exciting when after 3 hours of low & slow cooking, I turned up the heat to 450 just to finish the skin and some goose grease on the floor of the oven ignited.

It turned kinda crisp, especially on one side and the whole place filled with smoke but the fire went out before the building burned down so it's all good.

Sounds exciting! I've never cooked a goose, and I've cooked
just about everything. Post a picture if you can.

I'd have shot pix but the fire kinda robbed some of its beauty. It was going very well until then! (and in the end the sliced meat was great, especially with the gravy).

Same recipe from last year, and if you're careful it's delicious.

12 pound goose, 4 oranges, 25 shallots, OJ, bottle of madiera wine, chicken broth, butter, honey, salt, pepper.

2 days before dip goose in boiling water for 1 minute, then put in fridge (reserve neck).

Stuff goose cavity with 4 halved shallots and 3 quartered oranges, pierce skin with fork, salt & pepper, cook breast side down in rack at 325 for 90 minutes, flip it and cook it breast up for ~75 mins (till meat temp reaches 180), then on 450 for 10 minutes to crisp skin. Be sure to catch grease in a deep pan and empty grease pan when you flip bird. It makes a tremendous amount of grease. Use the grease to roast potatoes!

Meantime, make a gravy. Brown the neck in butter, add 4 thin sliced shallots, then 1.5 cups chix broth and madeira, OJ and sliced orange. Boil for 45 minutes, strain.

Meantime, sautee 15+ whole peeled shallots with butter, then add madiera, broth & some honey, simmer down to a glaze to serve with.

Also made wild rice, brussel sprouts & carrots. Awesome feast!

Well, we haven't had a white Christmas here since 1947, but we were close this year. We got hit with 5" of fresh powder overnight and it is still falling pretty heavy. Forecasts call for it to continue snowing through late this evening. Life comes to a virtual standstill around here on the rare occassion that it snows like this.

I hope everyone had a very Merry Christmas and Happy Hanukkah. I wish everyone a healthy 2011.
