Are there less than there used to be? Feels like it to me, but don't know if anyone keeps track of that particular thing. Wonder what the yearly number/percentage is for the Mets? /cough coughbengrimmcough cough...

Depends what you mean by "used to be". When I was a kid (60s-70s) they were few. Over the years I have seen many and there were more in the 80s. 90s and up, I don't know if that dropped off.

I could be wrong but...IMO, it might have something to do with how much people track splits nowadays...Most righties that can hit lefty well, really suck hitting RH'd (for example: Wally Backman; HoJo; Todd Hundley); so I wouldn't doubt that the lower levels some of these guys can't fair well against LHP so they either get benched vs LHP or just decide to abandon batting RH'd altogether...Plus, switch hitters in Little League and High School probably see 90% RHP (so they mostly bat LH'd) and then they start looking foolish when they start seeing better LHP in the higher levels of the minors)...

Because you see so many righties if you can hit you're probably good enough to be getting by that way, and are never forced to the bubble where you're desperate to try anything. And given the mentality of baseball players, they probably figure they're better off getting the reps in lefty vs lefty and getting better the way they feel natural than figuring out the other side of the plate.
