LWFS -- why do restaurants leave the shell portion of a shrimp

A pet peeve of mine. Particularly when the shrimp are in a dish with a lot of messy sauce (shrimp scampi or shrimp alfredo).

Presentation/making the thing look bigger, mostly. If it's fried/otherwise hot, it's a convenient handle for dippin' n' such. But if you're going for shrimp or prawn in something saucy or stewed (cioppino or bouillabaisse, say)... eating the shell isn't a terrible way to go. The animal's already been cleaned, and there's a lot of good scrimps-y flavor in there... especially in the head.
