I see "Mets" in the phrase "Mets fan" as an adjective, which would not require an apostrophe. However, I guess if you see it as meaning "a fan who belongs to the Mets" then the apostrophe would be appropriate.

i'm a mets fan i'm a knicks fan i'm a jazz fan i'm a heat fan i'm a thunder fan i'm a peanut butter and jelly fan near as i can tell, the apostrophe doesn't belong in any of them. the lack of capitalization is embarrassing tho

"peanut-butter-and-jelly fan" should be hyphenated. I love how a picture of a t-shirt turns, immediately, into a discussion of grammar.
