I know it's the NY Post, but still, the top seven stories on their web page (and 8 of their first 11) are about Megan, Harry, and their televised interview.

Those are some odd priorities even without a global pandemic and a state Governor teetering on the edge.

I have my suspicions, but they are the neighbors I never talk to, so I'll never know for sure, nor care.

VP Kamala Harris is visiting New Haven CT today. Saw her plane at Tweed New Haven Airport.

I've flown out of there on a Gulfstream II and it was a scary takeoff - barely missed the tops of the trees and house at the end of the runway.

I'm not sure the runway is long enough to accommodate a (what looks like a) Boeing 707/747 takeoff.

If I'm the guy with the house at the end of the runway, I'll be visiting relatives somewhere until that plane is gone.

One of the cable movie channels currently has the various Godfather flicks in rotation.

But it seems like someone has realized that the name GODFATHER Part III has become more a punch line than an attraction

because the finale of the trilogy is now being billed as: Mario Puzo's THE GODFATHER Coda: The Death of Michael Corleone

Pretty sure no one is going to be fooled by that change, but I suppose it was worth a shot.

Coupla random thoughts:

- Calm down Knicks fans. You won a playoff game, A playoff game ... as in ONE ... out of two ... at home ... against a lower seeded team whose playoff history is worse than yours.

Not a championship, not a series, not a final or even semi-final, but 1/4 of the way to the round which would take you to the round which would take you to the semi-final.

I while realize this is the first one since, like, the Carter administration, for this to really mean anything you have to keep it up for the net few months so the in-house and street celebrations

were both just maybe a wee bit over the top.

- Harry: be a royal, don't be a royal, I don't really care. Just. Stop. Talking.

If you've got daddy issues then take it up with daddy rather than blabbing to the entire world, or Oprah which is essentially the same thing.

And if you really want out of the limelight then going on network TV four times a week is probably not the best way to go about it.

I was today years old when I learned the Beach Boys didn't play any of their instruments on their albums -- at least through the 1960s. Brian Wilson insisted they use the famous LA Wrecking Crew of studio musicians. It's not that the Beach Boys couldn't play -- the band did play them on the road -- but Wilson was such the perfectionist that he wanted better people playing on the albums.

Barry came out and was 10 feet away. Boy has he had a lot of work done! But to his credit, he's 78 and did a two-hour energetic show, danced, sang all the hits, and laid on the schmaltz with a trowel. The ladies in the audience ate it all up. If there was any lip-synching, it didn't show.

KNOWLEDGE ARTICLE - USDA

There are three consumer grades for eggs: United States (U.S.) Grade AA, A, and B. The grade is determined by the interior quality of the egg and the appearance and condition of the egg shell. Eggs of any quality grade may differ in weight (size). U.S. Grade AA eggs have whites that are thick and firm; yolks that are high, round, and practically free from defects; and clean, unbroken shells.

Grade AA and Grade A eggs are best for frying and poaching where appearance is important, and for any other purpose. U.S. Grade A eggs have characteristics of Grade AA eggs except that the whites are reasonably firm. This is the quality most often sold in stores. U.S. Grade B eggs have whites that may be thinner and yolks that may be wider and flatter than eggs of higher grades. The shells must be unbroken, but may show slight stains. This quality is seldom found in retail stores because they are usually used to make liquid, frozen, and dried egg products.

I came across this article yesterday about the best methods for hard-boiling eggs. I didn't test any of them but the one below was the winning method. Also, the eggs are supposed to peel real easy with this method:

Method: Boil Then Simmer

About This Method: In this Food Lab–tested approach from J. Kenji López-Alt, you bring a large pot (about three quarts) of water to a boil, lower in up to six eggs (I used six), boil for 30 seconds, and then cover, reduce the heat to low, and simmer for 11 minutes. The eggs then go into an ice water bath for 15 minutes before peeling. The claim is that starting the eggs in hot water helps prevent the whites from sticking to the shell, thus making peeling easier.

Total Time: 35 minutes

Results

The eggs were definitely easy to peel. Starting at the fat end, I was able to pick away at the shell and by the time I got to the “nose” of each egg, the shell typically came off in one big, rounded piece. The yolks were firm and very slightly jammy. And the whites — oh my, the whites — were so tender that their texture was almost indistinguishable from the yolks.

My Takeaways: I was a little dubious about using 3 quarts of water for just 6 eggs, but López-Alt explains that this volume ensures that the timing and temperature are spot-on. And I'll tell you, the texture of those eggs was just fantastic, so I'll do this again and again. I might not use this for a big tray of deviled eggs (because I'd need to do multiple batches), but for any time that I want to spotlight the egg on its own, this will be my go-to method.

I've tried all the methods I think, and it still feels like it's mostly luck. (I'm sure making sure they're not overcooked is a big part of it, and I'm not sure that can be 100% regulated across all eggs). I'm halfway convinced we've genetically bread chickens for eggs with a smaller membrane over the decades.

Only method I having tried that I keep meaning to is the one where you add baking soda. supposedly raising the alkaline level of the shell makes it separate better from the acidity inside, but who knows. There are so many variables. Maybe I should boil an egg right now..
