Tomato Soup Cake

WARNING! THIS RECIPE IS BRITISH! BAKE AT YOUR OWN RISK!

]You will need:
250g sugar
125g butter
2 eggs
1 tin condensed tomato soup
1 tsp bicarbonate of soda
120g plain flour
1 tsp baking powder
1 tsp mixed spice
180g raisins
100g walnut pieces, optional
Some icing sugar to dust

Method:
Put the butter and sugar in a large bowl. Using an electric whisk (or a manual one if you don't have one) cream the butter and sugar until it is light and fluffy.

Beat in the eggs, tomato soup and bicarbonate of soda until it's all mixed together.

Using a sieve, add the flour, baking powder and mixed spice and give it a really good mix.

Finally stir in the raisins and walnuts. Remember, if you or your family has a nut allergy, don't add the nuts. It will taste just as nice without!
Pour the mixture into a cake tin. Preheat the oven to 180 degrees and put the cake in the oven for about 45 minutes. A clever way to check that the cake is fully cooked through is to test it with a fork. Put a fork into the cake and if the fork comes out clean, with no sticky mixture on it, then it's ready!

Using oven gloves take the cake out of the oven and out of the tin and leave to cool on a cooling rack. You may need to get an adult to help you do this as it will be very hot.
When the cake has cooled down, lightly sprinkle some icing sugar over the top. Now to test your friends and family - see if they can guess that the secret ingredient was tomato soup!

P.S. If I'm Jim and I'm a big soup guy and that's what this whole outfit is all about - I'm a disappointed in the effort. The 'Campbell's' font ain't even close.
