Happy Groundhog Day

From the groundhog capital of the world - Connecticut:
If huskies didn’t exist, our merchandise might have a groundhog on it. If you see one, know that it’s just as much a member of this community as you are. Groundhogs are a gift to our campus, and every time I see one scurrying from hole to hole, it makes my day.

They can be fun to watch.
Mom had one under her shed she called Gus. Gus had babies which had her up in arms but she enjoyed them I think.
There was a guy that was supposed to come get rid of them but he never showed up and she forgot about it
My niece and her family bought the house; now Gus will be hers :)

We named our family of them Tommy Lee, Tina, Timmy and Terry.
They live under our neighbor's pool but come to our yard to eat.
Yes, they are cute.

I hear a lot of fuss about Groundhog Day but no one ever mentions good recipes.
I'd probably enjoy the holiday much more if I knew how to cook and prepare groundhog.

Check your local library for The Beverly Hillbillies Cookbook. Granny
used to make some awesome stew from both possum and groundhog.

Our Army cook must have found the cookbook. When we would go through the food line, my buddy Russ always asked "What kind of critter is this?"
